What I Ate Wednesday: Featuring Cappello’s Lasagna & Tuna/Sardine Salad
EatWell Coach Shannon here sharing with you everything I ate in one day! “What I Ate Wednesday” is a regular feature now on the 202 Strong Blog this summer to give everyone plenty of real life examples of what an anti-inflammatory, whole foods diet looks like in action. My diet consists mainly of vegetables (both starchy and non-starchy), protein, and healthy fats. Sometimes I eat fruit. Sometimes I eat paleo “treats”. Sometimes I eat gluten-free grains like rice and oatmeal. Sometimes I drink alcohol (although typically not on Wednesdays ???? ).
Without further adieu, here’s what I ate in a day:
Breakfast: Smoothie consisting of: Two scoops Tera’s Honey Vanilla Goat Whey protein powder + 1/2 Frozen Banana + Large Handful of Organic Mixed Greens + 1 Cup Unsweetened Vanilla Almond Milk + Turmeric Powder + Cinnamon + Ice
Snack: Two Organic Wild Rice Cakes + Tuna/Sardine Salad made with Primal Kitchens Avocado Oil Mayonnaise, Dill, and Lemon Essential Oil. This was eaten an 90 minutes before my workout.
Lunch: Shredded Chicken Breast + Homemade Lasagna made with Capello’s Gluten Free Pasta, Zucchini, and Tomato Sauce. Drenched in Cholula. This was eaten about 30 minutes after my workout.
Dinner: Grass-Fed Ground Beef seasoned with lots of spices, Steamed Broccoli, Raw Carrots, and Cucumber.
